Quick, easy, and just right for two people (no leftovers to tempt you later)...
4 Tablespoons cake flour
4 Tablespoons sugar
2 Tablespoons cocoa
1 Egg
3 Tablespoons milk
3 Tablespoons oil
1 Mug
Mix the dry ingredients in a large mug or microwave safe bowl. Add the egg, milk, and oil and mix well. Microwave on high for 3 minutes. Let it cool a bit and turn it out onto a plate.

I had just noticed this was posted here. I have done this several times at home when I have a chocolate attack (happens!). It is terrific to take away that gotta have chocolate feel, and there isn't a whole cake to deal with. I was thinking, though, that you could put the dry ingredients in little baggies and have them on hand to throw in the camper and it would make a quick snack at any time on the road.

Here is a two-minute version, without eggs.
3 T. All purpose flour
1.5 T. Cocoa powder (unsweetened, but you can cut the sugar is using sweetened)
3 T. Sugar
1/8 t. Baking Soda
1/8 t. Salt
3 T. Vegetable oil
3 T. Milk
1/4 t. Vanilla
Chocolate chips (optional)
Mia all dry ingredients in a large mug so there are no lumps. Stir in wet ingredients until smooth. Add chocolate chips on top.
Microwave at 50% for 1 minute. Microwave 1 more minute at full power. (If it seems too wet you can microwave for an additional 15-30 seconds; just watch that it does t bubble over the top!)
If desired, top with whipped cream or ice cream.

Thanks for posting the recipe that didn't have eggs. I have looked in this section since I post the original recipe in 2010. I see there was a question about the type of oil... 5 use canola (or corn) vegetable oil. I believe the 10W30 is too heavy for the altitude I bake at.
