The red and black adapter is a connector to draw 12 volt current out of the cigarette receptacle. It should pull straight out if you want to remove it.

FYI. Here is a photo of the engine shield that the console attaches to. Note the 3 attachment points. The console slides up and off of those 3 attachment points.

Here is the one I have. It is a slim design - allows easy access to rear of coach. Regardless of what it says, it will fit your coach. It fit my 2003 chassis. I installed two 6v Trojan T-105 Plus batteries in series. Best thing I ever did with batteries. The Plus series have the individual hinged pop-up caps that I like - makes it easy to check water level. I also replaced the original battery tray with the EZ Glide unit that allows the batteries to come ...

It'd be my guess that there isn't a Class C motorhome on a Ford E-series chassis on the road that isn't over the allowable weight on the rear axle. Probably even more exagerated on the newer Sprinter-style chassis.
